Easiest beef and barley soup ever! This is delicious, and makes good use out of the left-overs from a standing rib roast. We made this tonight and it was delicious! Enjoy!

7-8 cups water (enough to cover the rib rack)
3-4 beef bouillon cubes
2 TBS Onion Onion seasoning
2 TBS Garlic Garlic seasoning
1-2 TBS Ultimate Steak seasoning
10 oz package frozen mixed veggies
1 cup barley

Boil the rib roast in the water and bouillon cubes for approximately 2 hours. Remove ribs from water and pick off all of the remaining beef. If you added any remaining roast, cut into cubes. Return need to pot and add mixed frozen veggies. Simmer for another 20 minutes. Add 1 cup of barley, and simmer 10-15 more minutes. Serve with crusty bread.

This is one of those meals that makes the whole house smell great while it simmers on the stove. I also feel like I get my money's worth from spending on a rib roast when I get an extra meals out of it.
